Peaceful Sunday Evenings

Right before having Addison Daniel was given the opportunity to go back to second shift at work after finally being able to work first shift in the almost three years since he has been employed with his company. We were excited when he finally went on first because that meant we could have a normal see you for dinner sort of marriage. We decided however, that second shift hours would be better for us since we would now be responsible for ensuring the best for Addison. I refused to put her in daycare and entrust her care with a complete stranger...first time Mommy talking...plus I knew that would mean her chances of getting sick all of the time would be greater. Sick babies in this house would more than likely equal sick Mommy since my immune system is questionable due to my Crohns disease and the medication I take for it. Anyway, Daniel being on second shift meant that Addison would only need to be watched by someone other than he or I for a two hour time frame if that and it would save us a bunch of money so back to second shift he went.

He is no longer home for dinners but it means that we just have to treasure our weekends with one another even more. Our favorite weekend event, if you can call it that, is to sit around on Sunday evenings watching some of our favorite shows. Currently we are enthralled with the Amazing Race and Undercover Boss and this past Sunday we got to watch the ACM's. I decided to make dinner early this past Sunday that way I could make this dish as an appetizer while we sat back with the family and watched our shows. Daniel is a pizza fanatic so I knew this would be right up his alley.


White Pizza Dip~
A Lipton recipe found on Cassie Craves

Ingredients:
1 envelope Lipton® Recipe Secrets® Savory Herb with Garlic Soup Mix
1 16-ounce container sour cream
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/4 cup chopped pepperoni
1 loaf Italian or French bread, sliced and toasted

Directions:

1. Preheat oven to 350 degrees. In shallow 1-quart casserole, combine soup mix, sour cream, ricotta cheese, 3/4 cup mozzarella cheese and pepperoni.

2. Sprinkle with remaining 1/4 cup mozzarella cheese.

3. Bake uncovered 30 minutes or until heated through. Serve with bread.

I was unable to find the Lipton soup mix so I used Good Seasonings Zesty Italian Mix and it still turned out really well. Maybe one day I will find the Lipton soup mix and try this dish as it was supposed to be.
