Savory Grilled Chicken

I promise I am cooking, it's just nothing that is decent enough to blog about, a lot of what I am cooking are recipes that I have already shared with you. Tonight though was different and to be honest I am un-able to take the credit as my Hubby found the recipe for this chicken and also prepared the meal. He found the recipe on the food network website and it is from Paula Deen. I thought it was good and his comment was "Paula done good".

Savor Grilled Chicken~
Compliments of Paula Deen

Ingredients:
  • 1/2 cup distilled vinegar
  • 1/2 cup lemon juice
  • 1/2 cup corn oil
  • 1 tablespoon salt
  • 1/4 teaspoon ground black pepper
  • 1 1/2 tablespoons dry mustard
  • Sprinkle cayenne pepper
Directions:
  • Preheat grill.
  • In a bowl, mix all ingredients together.
  • Pour mixed ingredients into a small saucepan. Over medium heat, bring sauce to a boil, stirring frequently. Remove saucepan from heat. While the chicken is grilling, use a pastry brush to apply sauce onto each piece of chicken.
We served ours with a nice side of green beans and for the first time ever...couscous. The debate is still on about whether or not I like the couscous. Hope you enjoy.

Good to see a post from you! How are you feeling? Do you think if I used olive oil (for health reasons...I can't tolerate corn byproducts) that it would change the flavor profile too much?

I am feeling pretty good, I am still dealing with morning sickness and now I am experiencing the headaches but I am finally into my second trimester so I will take it all in stride. Whatever I need to go through to have a healthy baby in the end.

I really don't think it matters what kind of oil you use, especially since Daniel used canola and I didn't even think to make note of that.
